YELLOW DOCK (RUMEX CRISPUS)

Known for its excellent blood purification properties, Yellow Dock is an excellent spring tonic, and indicated whenever cleansing and detoxification is needed.  The bitter yellow roots are the parts most often used medicinally, and the leaves are a delicious edible in the spring, best cooked into a soup or casserole.  The root is also rich in bioavailable iron and can help anemia, taken as a tea or tincture.  Seeds are edible and closely resemble buckwheat, a close cousin of Yellow Dock. They can be eaten or ground into flour, although it is certainly a lot of work!  A deeply tap-rooted plant that prefers part-shade and moist soils, although it will grow just about anywhere- not a picky one at all.  Sends up a flowering stalk up to 3 ft that turns a rusty-brown as the season progresses. Hardy to Zone 3.
